Live with an edge
The eTalk Series, held on Friday, July 17, 2020, still carries the theme "Togetherness with Family and Friends." In collaboration with The Westin, Surabaya, Pastry Chef Andik Wahyudi shared a recipe for the beloved dessert, "Steamed Lava Cake." Here are the ingredients you'll need:
- 250 gr dark chocolate couverture
- 250 gr butter/unsalted butter (please put it in the refrigerator immediately)
- 150 grams of sugar
- 5 whole eggs (please put them in the refrigerator immediately)
- 5 egg yolks (please put them in the refrigerator immediately)
- 50 grams of triangle flour
- 25 gr chocolate powder
- 25 grams of cornstarch
- 10 gr chocolate powder/cocoa powder – garnish
Equipment needed
- 1 pcs balloon whisk/pastry dough whisk
- 1 set of steamer pots/pans for steaming
- 1 large stainless-steel bowl (approximately 22 cm)
- 2 pcs medium size stainless bowls (approximately 12 cm)
- 10 pcs ceramic bowls/glass bowls, if you don't have any, you can use ceramic coffee cups (approximately 150 ml size)
- 1 pc stove
- 1 pcs pastry brush
- 1 pc small strainer
- 1 pc Rubber Spatula
- 1 pc Soup Ladle
